Winter Warmer: Pork Wonton and Vermicelli Noodle Soup


We're back with another tantalizing recipe from the talented Geoff's Kitchen that's sure to ward of the this winter chill...

Grocery List:
- 40 Fresh Wonton Wrappers
- 400 grams Pork Mince
- 1 Garlic Clove, finely chopped
- 1 Tablespoon Ginger, finely chopped
- 1 Golden Shallot, finely diced
- 1 Red Chilli, finely diced
- 1 Teaspoon Ground Coriander
- 1/2 Teaspoon Ground Cumin
- 1 225 gram tin Water Chestnuts, finely diced
- 1 Teaspoon Sea Salt
- 1/2 Teaspoon Szechuan Pepper
- 2 Litres Chicken Stock
- 2 Tablespoons Oyster Sauce
- 1 Tablespoon Kacip Manis
- 1 Teaspoon Sesame Oil
- 3 Cakes Dried Vermicelli Noodles
- 2 Boy Choy Plants, roughly chopped
- Spring Onion Stalks, finely sliced
-  Bean Sprouts
-  Watercress

Method:
1) Mix pork, garlic, ginger, shallot, chilli, coriander, cumin, chestnuts, salt and pepper in a bowl, cover, and refrigerate for one hour

2) Position a wonton wrapper with a corner facing toward you, place a teaspoon of pork mixture in the centre, wet the two edges furtherest from you with water, fold wrapper over the pork into a triangle shape and twist

3) Repeat step two for the remaining wonton wrappers and pork mixture and place to one side

4) Place chicken stock in a large saucepan with oyster sauce, kacip manis and sesame oil and bring to the boil, check seasoning and adjust as required*

5) While stock is coming to the boil, place the noodles in a bowl with a few drops of sesame oil and cover with boiling water for one minute, stirring to separate, then rinse and drain and divide into four serving bowls

6) Add bok choy, spring onions and bean sprouts in equal portions to the four serving bowls

7) When stock is boiling, add wontons, cooking for 3 minutes

8) Divide the wontons between the bowls and cover with stock

9) Garnish with a sprig of watercress and serve immediately

Tips: This may require more oyster sauce, kacip manis, salt and/or pepper
