Pork roast leftovers = Pork nachos



























So, we made a beautiful pork roast for dinner a few nights ago! Check it out here.

The next day, we had a BUNCH of leftover pork meat - no crackling...because we munched all of it away- Turns out pork roast without the crackling isn't very interesting... So I decided to brainstorm some dinner ideas for the pork....it took me all of two seconds to decide on pork nachos.


We absolutely love nachos, like burgers there are endless possibilities to the different combinations you can create with nachos. I know...I know they may not be the healthiest dinner meal...but come on who would turn down a plate of nachos?

Pork roast nachos 

1. Pork meat
2. Taco seasoning
3. Green onion
4. Cheddar Cheese
5. Diced tomato
6. Cooked Rice
7. Avocado
8. Sour cream
9. 1tbsp of oil
10. Tortilla chips- ( I like to take a white tortilla, cut it up like a pizza, and then lightly fry it in oil until golden brown)



Pre-cook your rice- I love rice on nachos! Put your oil into a skillet and heat it up. Place your leftover pork (or uncooked if making from scratch) in the skillet and season with taco seasoning to taste.

** If you are using leftover pork don't cook for too long. You are really just reheating the pork and adding a bit of flavor. If you are cooking from scratch then cook the pork all the way through.

Place your tortilla chips on your plate. Place a few spoonfuls of rice on top, then some pork. Sprinkle with cheddar cheese and microwave until cheese is melted. Top with avocado, diced tomatoes, a spoonful of sour cream and green onion to garnish. Enjoy!

Cork Decor by DIY Budget Girl. I have a vase full of wine corks and it is overflowing! I have been looking for something to make with them that is decorative at the same time. This is perfect. I love that you can use any text you want and it makes a great gift too! 






Greek Yogurt Apple Cider Donuts by Handmade is Better. YUM! I am so ready to have my first cup of hot apple cider and and these make me want my first taste of apple cider of the season to be donuts! They look so delicious.

  5. Those look sooo good! I am a vegetarian BUT when I do make meat for the rest of my family...I never want leftovers to go to waste. Making me hungry for nachos...and a margarita!
